Generally speaking, the standard of cuisine in Picardy is extraordinarily high. The area is rich in quality seafood - available daily in the ports and seaside towns, and of course from the regions’ finest restaurants in the evening. There is the famous Ficelle Picardie, pancakes layered with ham, cream and mushrooms, and one of the area's favourite high cholesterol delights - chips and mayonnaise - which you can find in most market squares. There are some strong cheeses such as Maroilles and Vieux Puant (which translates as old stinker!), hearty stews such as hochepot and carbonade de boeuf, and flamiche - the local variety of quiche.
