Most traditional dishes in these inland areas are meat-based and range considerably from region to region: simply cooked duck casseroles in the Auvergne.
Specialities include local freshwater from mountain lakes and streams, smoked and cured hams and Coq au Van. This region is famously home to many superb cheeses including Fourme d’Ambert, Saint Nectaine and Bleu d’Auvergne.
Choose from the locally produced ‘Cotes d’Auvergne’ wines or the Ardeche country wines and Cotes du Rhone from the east of the region, all of which are very popular.
